Birthday Fun and Lime Dessert!

My birthday was last week! Everyone keeps telling me that the older I get, the less I will like my birthday. Ha! Why would I ever hate a day where people buy me presents and my husband slaves away making me loads of delicious food???

My birthday was fantastic.  I opened presents in the morning (while eating some chocolate croissants from Trader Joe's -- YUM!), met my Mom for lunch, and played with the girls all day long!  Logan got off work early and made me some delicious fajitas for dinner!  It was a fantastic day, and I felt very spoiled!

Playing with the toddler science kit. We love it! Thanks, Tay!

For my birthday dessert I requested a family favorite: Lime Dessert (pretty creative name, right?). =) It has a lime flavored creamy center, with an Oreo crust.  Put it in the freezer, to enjoy a deliciously cool treat!  Perfect for the 100 degree weather we've been having!

In the picture below, you can see that we were so anxious for some Lime Dessert, we started eating before we remembered to do pictures and candles! Ha!

So, here is the recipe, so you too can enjoy this scrumptious treat! =)

First, chill one can evaporated milk overnight in fridge – also chill beaters and bowl if it’s a hot day.

Dissolve 1 small (3 oz.) pkg. Lime jello in 1/2 c. boiling water
Add 1/3 c. fresh lime juice
and scant 1/4 c. suger – stir to dissolve.

Whip 1 can chilled evaporated milk until stiff peaks form. Fold in jello mixture.

Crush approx. 2/3 pkg Oreo cookies in food processor. Place half in 9x13 pan. Add dessert mixture. Top with remaining crumbs.

Freeze, then enjoy!

  3. My Grandmother used to make this dessert every year for Christmas so in my family we call it "Grandma Iola's Green Dessert". Now I make it every year for my friend Trish's birthday - she loves it!!! She didn't think I was going to make it for her this year so started looking online for a recipe and found yours. (Of course I came through for her.) I have never tried freezing it but sounds like a great idea and will try that next time. Yummy!!!!! : )

  4. I grew up in a Minnesota/ND family and my mom used to make this all the time. I LOVED it and haven't had it in probably 25 years. Now in the Northeast, I'd ask around for the recipe and no one had ever heard of it or knew what I was talking about. THIS IS IT! I plan on "bringing it back" and sharing it with my neighbors. It's unusual in it's deliciousness, as well as the textures ~ the combination of the sweet/tart lime "curd" and it's smoothness along with the bite and crunch of the dark chocolate Oreos is simply divine. And it looks super-cool, too!
I used to listen to an Australian band called the Lime Spiders and I would always think of this dessert when I did. lol. Thank you so much for posting this! #forevergrateful
